“Liquid Gold of Vesuvius”, the oil used by the master pizza-maker Salvatore Di Matteo, was created thanks to a collaboration between the brand Eccellenze del Sud and the Azienda Agricola F.lli Punzo (Punzo brothers’ agricultural company).
The extra-virgin olive oil “Liquid Gold of Vesuvius”, produced by the Punzo brothers, has a medium fluidity and a faintly green colour with golden tints, produced when the olives are harvested at an early stage, and an absolute clarity determined by processes of natural filtration.
It has a light fruity fragrance that evokes a healthy, fresh fruit, harvested at the right moment, reminiscent of fresh almonds, green tomatoes and floral and herbaceous notes.
The taste has a medium-intense fruity, bitter and spicy quality, with overtones of fresh almond and light touches of herbs and artichoke, the result of an extremely careful harvest, with as little time as possible between the harvest and the milling.
The company’s milling process is rigorously cold, without chemical manipulation or refinement, to ensure the integrity of the oil’s natural compounds and its nutritional values.
This is an extra-virgin olive oil, with an acidity level, expressed as oelic acid, well below the limit of 0.8g per 100g.
